Smoky Shark Coffee is a Green Coffee Importer and a Coffee Roaster proudly roasting in Hong Kong. At our core, we love to explore flavours and share experiences in our own unique, playful way. Ultimately, we believe coffees should be diverse, that they should be accessible, and we hope to highlight that in both how we roast and how we source

Specialty Coffee is not Special by Accident

As Green Buyers, we choose to establish relationship with producers that will last through time, as opposed to simply chasing trends. We believe this enables us to celebrate the work of the obsessive, passionate partners by really coming to understand their coffees and how their personal philosophy is reflected in it.

Panama, Altieri Farms, River Flow Natural Geisha Chombi 100426 [2026 Harvest]
from HK$220.00

Produced by the Altieri Family, the family wamrth is heavily felt throughout the farm, with each plot named after and dedicated to each grandchildren of Eugene Altieri - it’s founder.

Following our visit in February, we came to love the Chombi plot with their soft florality and gentler characters. It is located at 1800 meters above sea level in Mima Estate, growing alongside the forets of the Volcan Baru National Park.

This lot was harvested April 10, 2026, fairly late into the harvest. The ripe cherries was then transported to their facilities in Alto Lino the next morning, where it underwent flotation to separate low-density cherries. Then the cherries are placed in grainpro bags, and these are submerged in cold water from the river for 5 days to complete the fermentation process. The coffee then underwent a drying stage in the drying room at a constant temperature of 18 degrees Celsius and 50% humidity until it was ready.

Panama, Mi Finquita, Natural Catuai #68 [2026 Harvest]
from HK$175.00

Mi Finquita began in 2016, as a terroir of opportunity for Ratibor and his wife Tessie. Located in Los Pozos, Chiriqui, an hour drive from the town of Volcan, Mi Finquita benefits from the high concentration of minerals originating from the Baru Volcano, along with the ever present thermal waters.

Ratibor’s coffee are designed, as they would say, combining science with a deep love for what they do and as a family. Ultimately creating amazing profiles that represents the very specific micro climates the varietals are planted on.

This Catuai underwent a thorough cleaning process before being placed on african beds to dry for 15-22 days carefully monitored according to the weather conditions. And indeed, watching Ratibor meticulously manage his drying beds between our cupping sessions, we came to recognize the remarkable intuition and care for his coffees, which profiled this incredible orange and ruby profile. This is the first of our many purchases from Mi Finquita this harvest.

Ecuador Andes Mountain, Washed Typica [Espresso Roast]
from HK$140.00

Produced by the Gonzalez Family, the Andes Mountain Washed Typica is our more every day, comfortable coffee. For us, coffees do not neatly fit in between a fruity or nutty dichotomy, and this espresso sits somewhere balanced between the two. Soft Fruitiness from the slight pre-fermentation before the coffee cherries were washed, but some structure and nutty qualities from the varietal traits.

The Roasting of this is slightly different to our regular lineup. More soluble and more developed, enabling it to be both a vibrant espresso and a fuller filter coffee. Expect notes of White Florals, Orange, Toffee, Almond!
